A Habit

Have I ever told you how much I love coffee and dessert... not necessarily at the same time, just once a day. A cup of coffee and a little something sweet- somedays even a yogurt does the trick. Want to really go all out- take me to a locally roasted coffee house with homemade organic sweet treats.  Yes, that is my idea of a perfect afternoon outing.

What can't you go a day without? Maybe it's a big problem, but "they" do say the first step to recovery is admitting you have a problem in the first place, right?!




Quiet Mornings

On Saturday, I was the first to wake up (and it may or may not have been before 7:30am.) I know, I know, I can't help it...as soon as the sun comes up, I am usually the first one up with a happy list of Saturday morning tasks I plan on tackling around the house.

Before I began accomplishing tasks though, I decided to sit for a minute, indulge in some coffe and read a short devotion on faith.

"Cause me to hear Your loving-kindness in the morning for in You I do trust; cause me to know the way in which I should walk for I lift up mu soul to you." Psalm 143:8 

"In the morning.... "

Reading this verse challenged me. Do I wake up in the morning expecting to hear His loving-kindness and the way I should walk? How many other things take my attention in the morning. Usually, I wake up an hour before my husband to prepare for each day, but am I preparing in the right way if I am not in the word for at least five minutes of that hour?

From now on, I am going to accept the challenge. No matter how hectic the day may seem, I am going to spend at least five minutes in the morning soak up His loving-kindness.

Do you get some quiet time during the day? This has always been a struggle for me...









how to make strawberry jam


With Mother's Day around the corner, I'm sure you've been thinking about what you want to give. This past weekend, we went to Tampa and got to celebrate Mother's Day with my mom and this weekend we will be celebrating it with my mom in law. My mom and grandmothers loved the jam! I can't wait for their taste review.

Last year for Mother's Day I made a homemade sugar scrub, so to stick with the personal gift tradition this year I decided on homemade strawberry vanilla jam. This was my very first attempt with both making jam and canning. Both were a little intimidating at first, but once I got started, it went pretty smoothly.

Homemade Strawberry Vanilla Jam:
-square piece of fabric
-mason jar 
-bakers twine
- jar tag on cardstock 
.......
- 2 lb strawberries
- 1 tsp honey
-1/2 tsp vanilla
- 3 c sugar 
- juice of 1 lemon
- 1/2 box pectin (found at whole foods)

1. Wash jars and lids. Let dry. (always use new lids for your jars - old ones are unlikely to seal)

2. Wash and chop strawberries. I used a food processor to blend down leaving a few chunks. 
3. In a sauce pan, heat crushed strawberries and lemon juice. Stir in pectin and bring to a full boil. Stir constantly. 
4. Add sugar, honey and vanilla until dissolved.  Let boil - continue to stir. 
5. Remove from heat and skim off foam from top. 
6. Ladle jam into jars.   
7. Once jam is placed inside jar after cooking, place in large pot of boiling water with lid on. Let sit for 12 mins. Carefully take out and let sit on counter for up to 24 hours. During this time, the jar should create a seal. Now the jam can be left on the counter unopened for around 2 months. Once opened though, place in refrigerator.

Easy Weeknight Fajita Tostada

Since we've gotten married, we have really been trying to eat healthy while at home. Vacation eating is a whole other story ;) One of my favorite weeknight recipes would definitely have to be these chicken fajitas. Not only are they easy to make, they get us eating veggies that we normally wouldn't.


Easy Weeknight Fajita Tostada: 
1 lb chicken breast (cut into strips)
1 red pepper (cut into thin strips)
1 green pepper (cut into thin strips)
1/2 yellow onion (chopped)
juice of 1 lime
juice of 1 lemon 
salt/pepper
1/4 c water
1 tsp chili powder
1 tsp cumin
1 tsp garlic powder
1 tsp chipotle powder
corn tortillas

1. Place season chicken, onions and red/green pepper in large bowl with salt/pepper, cumin, chipotle powder, chili powder, garlic powder.

2. Add lemon and lime juice. Cover and chill for 15-30 minutes (if you are in a hurry you can just cook it right away).

3. Place the chicken and vegetables on a skillet with under medium heat. Add water.

4. Let simmer until cooked all the way through.  Stir around occasionally.

This next step is if you want to make your corn tortillas crispy the healthy way: 

5. While chicken is cooking, heat over to 425. Thinly spread vegetable oil and salt around both sides of tortilla. Place on baking sheet for about 15 minutes until crisp.

Once the chicken and tortillas are done, you may enjoy! We like to add chopped lettuce, cheese, salsa, more lime, and sometimes even guacamole. We do not eat them like traditional fajitas, we eat them on top of the crispy tortillas, similar to mini pizzas.
