Mom's {Oregano Crusted} Salmon

I love salmon.

For a while, it was the only fish I actually liked. 
{aka the only fish my parent's did not force me to eat, 
before leaving the dinner table}

Here we are on Mother's Day this past weekend. It was a nice visit to Tampa!

When I moved away for school, I made sure to learn this recipe from my mom.


I honestly cook this dish twice a week.
It's that good.


And simple too. There is literally nothing to it.


:: Oregano Crusted Salmon ::

Ingredients:
1 lb salmon
2 tsp. oregano
1 tsp. salt
1 Tbs. olive oil
1 tsp. pepper
1 Large white potato


How To:
1. In a small bowl, mix together salt, oregano, pepper & olive oil.
2. Place salon on surface & season pink top with half of seasoning mixture.
3. Cut potatoes into small thin slices & lightly season with a dash of salt.
3. Place a drop of oil on skillet and set to medium heat (I use a cast iron skillet).
4. Place the salmon (season side) down in the center of the skillet.
5. Place potatoes around salmon on the pan.
6. Let salmon cook until pink - half way through.
7. Toss potatoes occasionally.
8. Once half way pink, pour remaining season mixture on top of salmon.
9. Flip salmon over - uncooked side down.
10. Let fish pink all the way through.
11. If you are using a cast iron skillet: transfer over to 350 degree oven for 5-7 mins.
12. If you are not using cast iron, continue cooking on stove top until completely pink.


Time: 30min
Serve: 2 Large or 4 Moderate Portions

I usually accompany salmon with brown rice or broccoli.
