We Are Back!

If you walked today, this is some of what you would see...

We have been organizing, cleaning, meal planning, cooking, baking and getting ready for the holidays this entire week! I love this time of year - it's even more fun as a married couple!


Believe it or not, we haven't bought anything this year to decorate for Christmas... everything you see was found around the house in boxes or passed down like these.

I have missed blogging dearly and promise to be on here a lot over the break!

As I write to you, I am staring out of our suite window looking at the Pike Market in Seattle. I have had the most amazing past two weeks!!!!

There is so much I must fill you in on....our wedding, our honeymoon, life as newlyweds! It's all so much fun! We fly back home on Thursday and will begin sorting through all of our stuff and getting our little house in working order. I can't wait to have my hubby by my side in our home! I've been looking forward to it for a long time!

So look forward to my many updates next week on everything thus far!!!!

Four.

Only four days left until the big day. Not to mention a road trip to Tampa, Thanksgiving and Black Friday thrown in the mix too!

Today, I'm only working half day and spending the rest preparing to head to Tampa tomorrow!

Here's what's been going on lately.... I've been getting so much love from everyone and am so thankful for it!! From my coworkers, to the parents, to the students! God has truly poured His grace over us this season throughout this time in our lives.

In other news.. I made the big announcement to the students that after the honeymoon, they have to start calling me Mrs. Diaz. For being 6 years old, they didn't take the news all too well, but no worries, I'm sure it will stick on, eventually!

Happy Friday!!! Today the teachers at my school are throwing a bridal shower for me and I am so thankful for all they are doing!

What are your plans for this Friday before Thanksgiving?

Well, this is the last weekend before the big day! My fiance will be coming back in town tonight (he had to travel for business) and we are going to spend the weekend relaxing, moving his stuff and finishing up last minute wedding/house errands along with a lot of packing!

Thanksgiving is next week! Can you believe it??

Italian {Grass Fed} Beef Meatballs



The other day while strolling through Whole Foods, I noticed the 85/15 grass fed ground beef on sale. I am usually not a ground beef person, but I thought I should give it a try.

I love meatballs. Growing up, my grandmother made them all the time and I've never been able to make them as good as her! If you are in the mood for some yummy meatballs, you should give these a try. They are very tasty & so easy!

Italian Meatballs:
-1lb grass fed ground beef
- 1/2 c italian bread crumbs
- 2 tsp. olive oil
- pinch of salt/ pepper
- 1/2 c grated parmesan cheese
- 1 egg
- 1 jar of your favorite marinara sauce

1. Preheat oven to 350.
2. Place all ingredients in large bowl and mix together with your hands. Try not to mix it too much, this will cause the meatballs to harden.
3. Roll into small balls with your hands & place on greased baking sheet.
4. Bake for 20-30 minutes. Do not over bake.
5. Place meatballs into saucepan with marinara sauce. Leave on low for about 20 minutes.

Enjoy!! I made these for bible study last week and they were a hit! We served them over bread as an appetizer!
